As I travel to various cities, I am always on the hunt for barbecue restaurants. To my dismay, I am often disappointed, as there is no visible sign of an outdoor pit or smokehouse. How is pit barbecue cooked indoors with no visible sign of smoke? It simply cannot happen. At best, it is just barbecue cooked in the oven, which is no comparison to pit barbecue.
Often, customers tell me they knew I was nearby because they could smell the smoke, and even better, they would follow the smoke to find my food truck. “Follow the smoke and you can’t go wrong” is my motto for unforgettable barbecue!
